Anaerobic Fermentation: The Science Behind the New Specialty Coffee Standard

A term that used to live only in the lab is now part of your coffee's label. It's worth understanding what it actually means before you pay more because of it.

"Anaerobic fermentation" has become one of those terms that shows up on coffee packaging without anyone really explaining it. The idea is simple, even if the name sounds complicated.

After harvest, instead of leaving the coffee pulp exposed to air (as in traditional processing), the producer seals the freshly picked cherries in an airtight tank, with no oxygen. Inside, yeasts and bacteria already present in the fruit — such as Saccharomyces cerevisiae, Pichia fermentans, and lactic acid bacteria like Lactiplantibacillus plantarum — start "feeding" on the sugar in the pulp. The result is organic acids, esters, and aldehydes that, after roasting, show up in the cup as notes of ripe fruit, wine, or even caramel.

What the Science Has Already Confirmed

This isn't marketing talk. A study published in Food Bioscience (Jimenez et al., 2023, v.51, art. 102218) applied this type of fermentation to Coffea arabica beans and found, via liquid chromatography, citric, malic, and succinic acids in every fermented batch — with lactic acid appearing clearly only in the batches processed this specific way. A 2024 study in the Brazilian Journal of Microbiology tested different fermentation times and showed that duration changes the drink's microbiological, chemical, and sensory profile.

What We Still Don't Know

Now for the honest part: there's no way to say which combination of yeast, time, and temperature is "the right one." The very studies cited above find different results depending on the coffee variety, altitude, and how the beans are dried afterward. What can be said with more confidence is that the process weighs as much as origin in shaping flavor — and, unlike origin, it's a choice.

There's also a curious detail: a 2026 study published in the journal Foods (MDPI, v.15, n.8, art. 1287) found that the information printed on the label about the fermentation process changes how people perceive the coffee's taste — even before they take a sip. In other words: part of the flavor is in the cup, and part is in the explanation that comes with it.
